Sesame Oil Garlic Noodles

Sesame oil contains healthy fats, improves scent, deepens flavour, increases nutrition, facilitates digestion, and delivers a rich, nutty taste in little amounts across a variety of cuisines. It releases a warm, roasted nut fragrance that instantly elevates any dish. Just a small amount can transform simple noodles into a restaurant-style meal.

From South Indian tempering to Chinese stir-fry, Korean bibimbap to Japanese ramen, sesame oil blends seamlessly into both traditional and modern recipes.

Ingredients:

For the noodles:

  • 150–200g noodles (Hakka / egg / whole wheat)
  • Water for boiling
  • ½ tsp salt
  • 1 tsp oil (for boiling water)

For the garlic sesame sauce:

  • 1½ tbsp sesame seed oil (preferably cold-pressed)
  • 6–8 garlic cloves, finely chopped
  • 1 tsp grated ginger
  • 1 medium onion, thinly sliced
  • ½ cup capsicum, julienned
  • ½ cup carrots, julienned
  • 2 tbsp spring onion greens, chopped
  • 1 tbsp soy sauce
  • 1 tsp vinegar or lemon juice
  • ½ tsp sugar or honey (optional)
  • ½ tsp black pepper
  • Salt to taste
  • 1 tsp toasted sesame seeds (optional but recommended)

Method:

Step 1: Cook the noodles

  1. Boil water with salt and oil.
  2. Add noodles and cook until just al dente (do not overcook).
  3. Drain and rinse with cold water to stop cooking.
  4. Toss with a few drops of sesame oil to prevent sticking. Set aside.

Step 2: Prepare the garlic sesame base

  1. Heat sesame oil on low to medium heat (do not overheat as sesame oil has a strong flavour).
  2. Add chopped garlic and sauté until lightly golden and aromatic.
  3. Add ginger and onions. Stir until onions turn translucent.

Step 3: Add vegetables

  1. Add carrots and capsicum.
  2. Stir-fry for 2–3 minutes to keep the veggies slightly crunchy.
  3. Sprinkle a pinch of salt and pepper.

Step 4: Create the sauce

  1. Add soy sauce, vinegar/lemon juice and sugar.
  2. Mix gently and let the flavours blend for 30–40 seconds.

Step 5: Combine noodles

  1. Add cooked noodles to the pan.
  2. Toss well using tongs so the sauce coats evenly.
  3. Add spring onion greens and sesame seeds.
  4. Cook for another 1–2 minutes on a low flame.
