 Ingredients:

  • 500g chicken (bone-in or boneless), cut into pieces
  • 2 tbsp sunflower oil
  • 1 large onion, finely sliced
  • 2 tsp ginger-garlic paste
  • 2 medium tomatoes, chopped
  • 1/2 cup plain yoghurt (whisked)
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder (adjust to taste)
  • 1.5 tsp ground coriander
  • 1 tsp garam masala
  • Salt to taste
  • 1/2 to 1 cup water (depending on desired curry thickness)
  • Fresh cilantro (coriander leaves), chopped – for garnish

Cooking Method:

  1. Heat sunflower oil in a deep pot or skillet over medium heat.
  2. Add sliced onions and sauté until golden brown (about 8–10 minutes).
  3. Stir in ginger-garlic paste and cook for 1–2 minutes until the raw smell disappears.
  4. Add the chicken pieces and sauté until they are lightly browned on all sides.
  5. Mix in dry spices: turmeric, red chilli powder, coriander powder, and salt. Stir well to coat the chicken evenly.
  6. Add chopped tomatoes and cook until soft and the oil starts to separate (about 5–7 minutes).
  7. Lower the heat, then slowly add the whisked yoghurt, stirring continuously to prevent curdling.
  8. Add water (1/2 to 1 cup based on how much gravy you want), mix, and bring to a gentle boil.
  9. Cover and simmer on low heat for 10–15 minutes until the chicken is tender and fully cooked.
  10. Add garam masala, stir gently, and cook for 1–2 more minutes.
  11. Garnish with chopped cilantro and serve hot with rice, naan, or roti.
