Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • ¾ cup warm water

  • 2 tablespoons white sesame seed oil
  • 1 tablespoon soy sauce
  • 1 tablespoon minced ginger
  • 2 garlic cloves, minced

  • ½ teaspoon white pepper
  • 1 teaspoon sesame seeds

Step 1: Get the dough ready

Make the dumpling wrappers first. Add the all-purpose flour and a pinch of salt to a large mixing bowl. Using a spoon or your hand, mix the dough until it comes together, then gradually add the warm water. 

On a surface dusted with flour, knead the dough for 8 to 10 minutes, or until it is elastic and smooth. Let the dough rest for half an hour after covering it with plastic wrap or a moist cloth. The gluten relaxes during this rest period, which facilitates rolling out later.

Step 2: Prepare the Filling

Make the filling while the dough is resting. Chicken or mushrooms, chopped napa cabbage, ginger, garlic, green onions, soy sauce, salt, white pepper, and white sesame seed oil should all be combined in a medium bowl. Step 4: Prepare the dumplings.

The dumplings can be pan-fried or steam-cooked.

To steam, place parchment paper inside a steamer basket and steam the dumplings for ten to twelve minutes.

To cook in a pan: In a nonstick skillet, heat 1 tablespoon of oil over medium heat. Cook the dumplings until the bottoms are brown, adding them flat-side down. Cover, add ¼ cup water, and steam for about 7 minutes, or until the water evaporates and the dumplings are cooked through.
